Not sure really. This one will be the first marine brushless esc I've used. If you use a car one you may need to re configure it as most car ESC's are set up as F/B/R or just F/B, obviously with a boat brakes are no real use and no reverse is even worse. I imagine most Marine brushless esc's are unsensored as they need to be waterproof. In cars the unsensored ones can "Cog" or "Stutter" at low speeds not sure how this would affect a boat. Mainly I would guess it may cause a less than smooth transition from forward to reverse.

Welcome back Jeremy, I look forward to a blog.
I'm just about to use a car ESC in my latest police boat I'm interested in your thoughts about using car ESCs in boats

It’s been a while but whilst I’ve been away I’ve looked in regularly. I have been diverted by RC cars very expensively over the past two years but when I needed something to tow on a trailer I remembered the Sea Breeze in the shed. Starting to renovate it. It has an out runner brushless and will run on 2s lipo. I still ave a half built Hansajole as well a several other boats that need updating. My time with cars has given me a lot fun but I just keep coming back to boats. Now I just need to extract the Dark Biter from the loft and fit twin brushless motors along with 3s lipos. More to follow
